With notes of vanilla and a pleasantly dry texture, Colussi Zuppalatte is an Italian cookie like no other. Instead of butter or animal fat, these rectangular biscuits are made with a type of Italian sunflower oil that's similar to extra virgin olive oil.
You can crumble these traditional Italian biscuits over a bowl of ice cream, a scoop of gelato, or a slice of cheesecake. Alternatively, use them to add a nice crunch to an Italian lemon cake. For a layered topping, sprinkle biscuit crumbs over a dessert along with pine nuts and powdered sugar, then give the dish 30 minutes to cool completely in the refrigerator.
