Colatura di Alici is a traditional Italian fish juice made from anchovies, from the tiny fishing town of Cetara, Italy. Colatura di Alici is more commonly known in the United States and Anchovy Juice or Anchovy Sauce.
Produced from fermenting salted anchovies in brine, this renowned transparent amber liquid is enjoyed worldwide. Colatura is an excellent compliment to spaghetti and a delicious dressing to flavour any kind of dish.
It can be seasoned with fresh herbs such as parsley, garlic, paprika and added to pure olive oil as a dressing for spaghetti or linguine. Also, instead of using salt, use colatura to garnish and enhance dishes.
