More Than 100 Years of Black Gold
Mussini has been invested in the rich tradition of Italian balsamic vinegar of Modena since 1909. North of Bologna, Modena has been the very heart of this trade for centuries. It is the home of what is commonly known as “black gold” due to its culinary, cultural, and economic significance. Mussini is a brand that is passionate about upholding this tradition and its standards for excellence.
Types of Mussini Balsamic Vinegar
There are very specific qualifications for balsamic vinegar dressing to be considered an authentic product. Italy’s Ministry of Agriculture has strict rules about what can be certified P.G.I. (Protected Geographical Indication) and even more prestigious, P.D.O. (Protected Designation of Origin). Italian balsamic vinegar of Modena can be made from a variety of grapes, such as Sangiovese, Lambrusco, and Trebbiano. P.G.I. balsamic must be a mixture of at least 20 percent cooked grape must, 10% concentrated must and wine vinegar, and 10 years aged balsamic vinegar. The precious P.D.O. variety must contain at least 12 years aged balsamic vinegar. At Supermarket Italy, you’ll discover Mussini Aged Balsamic Vinegar of Modena that is 20, 30, or even 100 years old!
In addition to the traditional types of “black gold,” Mussini also offers various balsamic creams and condiments. Balsamic creams are viscous with a lower acidity level, while condiments like balsamic spray (a blend grape must and P.G.I. balsamic) have a higher acidity level. Each type has its own specific uses.
How To Use Balsamic Vinegar of Modena
Italian balsamic vinegar of Modena has endless applications, ranging from cheese to meat to fruit. The beloved sour-sweet flavor compliments savory and delicate dishes alike. Drizzle balsamic vinegar dressing on salads, flatbreads, and roasted veggies. Because of its higher density, balsamic cream is ideal for plating desserts and grilled meats. It’s difficult to find a dish that wouldn’t be improved with Mussini balsamic!
