Taggiasche Olives
The Taggiasca is a type of Italian olive grown in Ponente, the western part of Liguria. These small olives are very similar to Niçoise Olives, which are grown just across the border in France. Having 23 to 26 percent oil content, the olives are frequently used for making olive oil. It starts as a green oil and mellows into a straw yellow color, but when Taggiasche olives are used as table olives, they are let to ripen to black. Use Taggiasche olives as an antipasti offering alongside pecorino romano cheese, or mix them in traditional Ligurian spaghetti dishes.
