Ingredients

2 cups Natisani Gluten Free Cake Flour

2 tsp baking powder

1/4 tsp salt
3 large eggs

3/4 cup granulated sugar
1/2 cup unsalted butter, melted
1/2 cup whole milk
Zest of 2 lemons

1/4 cup fresh lemon juice
-
1 tsp vanilla extract
Powdered sugar for garnish
Directions
Preheat oven to 350°F (175°C).
Grease and line an 8-inch round cake pan.
In a bowl, whisk together the Natisani Gluten Free Cake Flour, baking powder, and salt.
In a separate bowl, beat the eggs and sugar until pale and fluffy.
Add the melted butter, milk, lemon zest, lemon juice, and vanilla extract. Mix well.
Gradually fold the dry ingredients into the wet mixture until smooth.
Pour the batter into the prepared pan and smooth the top.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely.
Dust generously with powdered sugar before serving.
