12 oz Italian pasta (Trofie, Fusilli, or Penne)

4 tbsp Pistachio Pesto

½ cup heavy cream
½ cup freshly grated Parmigiano Reggiano
2 tbsp reserved pasta water

1 tbsp Extra Virgin Olive Oil
Fresh basil leaves

2 tbsp chopped roasted pistachios
Freshly cracked black pepper

Salt, to taste
Directions
Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve about ½ cup of the pasta water before draining.
In a large skillet over low heat, warm the Extra Virgin Olive Oil and stir in the Sanniti Pistachio Pesto.
Pour in the heavy cream and mix until smooth and creamy.
Add the grated Parmigiano Reggiano and stir until melted.
Toss the cooked pasta into the sauce, adding a splash of the reserved pasta water until the sauce reaches a silky consistency.
Season with freshly cracked black pepper and salt if needed.
Garnish with chopped roasted pistachios, fresh basil, and an extra sprinkle of Parmigiano Reggiano.
