What is Bottarga?
Bottarga is the Italian name for a delicacy of salted, cured fish roe, typically of the grey mullet frequently found near coastlines throughout the world. Common in Sicilian and Sardinian cuisine, fish roe is used to add salty flavor to dishes, a more luxurious version of dried anchovies. Bottarga is often served with olive oil or lemon juice as an appetizer accompanied by crostini, or tossed with pasta noodles, breadcrumbs, and olives.
