Directions
Cook the pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package directions until al dente. Then drain it and reserve.
Prepare the chorizo: In a large skillet, heat a little olive oil over medium heat. add chorizo sliced or chopped into small pieces. Sauté the chorizo until golden and release a little fat. Remove the chorizo from the pan and reserve.
Sauté the onion and garlic: In the same pan with the chorizo fat, add the chopped onion and garlic. Sauté until tender and golden.
Add Tomatoes and Spices: Add peeled or diced tomatoes to the pan. Add paprika, oregano, black pepper, and salt to taste. Mix well and cook over medium-low heat for about 10 minutes, turning occasionally until the sauce thickens slightly.
Combine everything: Add the cooked chorizo to the tomato sauce and mix to combine the flavors. Let cook for a few more minutes to allow the flavors to meld.
Mix the pasta: Add the cooked pasta to the pan with the chorizo sauce and stir until the pasta is well coated with the sauce.
Serve and decorate: Serve the pasta on individual plates. If desired, sprinkle grated Parmesan cheese and chopped fresh parsley on top for added flavor and presentation.
